Uppu Seedai

This fried snack is made as an offering to God on Krishna Jayanthi.

Caution :
This is pretty difficult to get right. The dangers of bursting, the seedai just breaking and becoming powder at the bottom of the kadai are there. Was told not to give up hope and keep trying till I get it right and that even pros find it difficult at times :)

Ingredients

Rice flour 1 cup
Roasted urad Dal flour 2 tsp
Jeera
Salt
Asafoetida
Hot oil
Coconut grating
Oil for frying

Get Cooking!

1. Mix the rice flour, urad dal flour, jeera, salt, asafoetida, hot oil, coconut grating into a rough dough by just sprinkling water. The dough should just be such that you can make a ball out of it, not too watery nor too dry.

2. Roll the dough into small balls and place them on a cotton cloth for a while.
3. Heat the oil for frying in a kadai.
4. Put in the seedai such that it fills the oil
5. Do not turn the seedais for a while. Then turn them over and fry until they are golden brown and crispy.
6. Remove from oil and place on tissue paper.

Tips

Mix the dough very well and make it soft without lumps; otherwise the seedai will burst open in hot oil. While preparing the balls with the hands there should be no gap or lines in the lump. The time of removal of seedai from oil is critical; they should be removed only hearing the sound of crispness on stirring.
